What did I learn?
Coconut milk is a popular plant-based milk and is best suited for those who follow a vegan diet. It is a versatile ingredient used as a base for many curries. In this project, we focus on the formulation of coconut milk with no added preservatives or sweeteners. The sensory parameters have been standardized to retain color, taste, and texture. The product was made using fresh ingredients and can be consumed straightaway. Currently, we are focused on the formulation and stability of the product. The product will be analyzed for shelf life after its formulation.

Outcome:
A ready-to-consume coconut milk, which can be used as a base for various curries, was formulated in Food Research Lab(FRL).

What went well?
The product had excellent sensory characteristics since it was formulated after several trials. However, we would like to improve the product stability by conducting further trials.
What could I have done better?
I would like to improve the formulation so that it has a longer shelf life.
